- Drizzle olive oil in a baking dish and place the meat in it. Using the tip of a knife, make small holes in the cut to allow the seasoning to penetrate. Season well with vinegar, garlic, oregano, salt, black pepper, and green onions.
- Let it marinate in the refrigerator for about 2 hours.
- Peel the potatoes, or if you prefer a more rustic style, you can leave the skin on. Cut them into quarters and season with salt, black pepper, oregano, and olive oil.
- Remove the meat from the refrigerator, drizzle it with olive oil, and arrange the seasoned potatoes around it. Cover with aluminum foil.
- Bake in a preheated oven at 200°C (392°F) for approximately 40 minutes.
- Afterward, remove the aluminum foil, sprinkle the butter over the meat, and return it to the oven at 180°C (356°F) for another 20 to 30 minutes, or until it reaches your desired doneness. The cut should be juicy, and you can control the cooking to ensure it doesn’t overcook and dry out.
- Remove from the oven and let the meat rest for about 5 minutes. Then slice it and enjoy your meal!
Oven-Baked Angus Striploin with Potatoes
Angus striploin is one of the prime cuts of beef, located on the upper side of the animal's back, just above the rib. In Argentina, it's known as chorizo and is the cut that has made the country a reference in gastronomy.
In the U.S., it's called Striploin—a tender and flavorful meat. Its outer layer of fat helps retain the meat's moisture. It has gained popularity in Brazil and has become essential for barbecues.
But the striploin is delicious not just on the grill. Today, we will teach you how to prepare this cut in the oven with diced potatoes.
