Ingredients

  • 2 tablespoons olive oil
  • 1.5 kg VPJ Angus beef ribs
  • 1 teaspoon annatto powder
  • 1 onion
  • 2 cloves of garlic
  • 1 bay leaf
  • 1 liter beef broth
  • 1 kg cassava (yucca)
  • Salt and pepper to taste

  1. In a pressure cooker, heat the olive oil and brown the ribs with the annatto powder, onion, garlic, and bay leaf.
  2. Cover with the beef broth and seal the pot. Cook for 30 minutes after the pressure begins.
  3. Turn off the heat, allow the pressure to release, and open the pot. Add the cassava, salt, and pepper.
  4. Seal the pot again and cook for another ten minutes after the pressure begins, or until the cassava and meat are tender.
