- In a pressure cooker, heat the olive oil and brown the ribs with the annatto powder, onion, garlic, and bay leaf.
- Cover with the beef broth and seal the pot. Cook for 30 minutes after the pressure begins.
- Turn off the heat, allow the pressure to release, and open the pot. Add the cassava, salt, and pepper.
- Seal the pot again and cook for another ten minutes after the pressure begins, or until the cassava and meat are tender.
