- Puncture the loin in several places and place it in a plastic bag along with the wine, garlic, onion, rosemary, thyme, and bay leaf, creating a marinade to season the meat. Seal the bag well and ensure the marinade spreads all over the meat. Refrigerate and let it marinate overnight.
- Preheat the oven to 180°C (350°F). Remove the meat from the bag and season with salt and pepper, then place it in a roasting pan. Pour the marinade over the meat and add a bit more water.
- Cover with aluminum foil and place it in the oven. Allow it to roast for 1.5 hours, adding a little water to the roasting pan as needed. In the last 15 minutes, remove the foil and increase the heat to brown the meat. Serve with the sauce from the roasting pan.
