- Mix the ground flank steak, brisket, and bacon well with your hands (use gloves).
- Portion the meat into 180g each. If you don’t have a scale, you can do this by hand. Just take the desired amount; the more meat, the taller the burger.
- Roll the meat ball from one hand to the other a few times.
- Use a measuring ring, place the meat inside, and press down firmly with a spoon. You can also do this by hand—just press the meat ball against a flat surface and shape it manually.
- Place the burger in a pan over medium-high heat and monitor it to reach your desired doneness. For rare, cook for about 1.5 minutes on each side; for medium, it’s 2.5 minutes; and for well-done, cook for 4 to 5 minutes on each side.
