Dorper Lamb Rack

Ingredients

  • 1 piece of Dorper VPJ French Rack
  • 1 cup of olive oil
  • 1 cup of red wine
  • 3 tablespoons of fresh rosemary
  • 6 crushed garlic cloves
  • Salt and white pepper to taste

  1. Season the Dorper VPJ lamb rack well with the mixture of all ingredients except for the rosemary. Let it rest for about 20 minutes.
  2. Then, add the rosemary on top of the meat. Wrap it in plastic wrap and let it rest for another 40 minutes—outside the refrigerator.
  3. Preheat the oven to 250ºC. To protect the ends of the bones, wrap them in aluminum foil to prevent burning.
  4. Place the rack in the hot oven wrapped in aluminum foil. After 10 minutes, remove the foil from the pan and leave it in the oven for another 10 minutes.
  5. Remove from the oven, slice the chops, and your Dorper VPJ lamb rack will be ready!
