- Season the Dorper VPJ lamb rack well with the mixture of all ingredients except for the rosemary. Let it rest for about 20 minutes.
- Then, add the rosemary on top of the meat. Wrap it in plastic wrap and let it rest for another 40 minutes—outside the refrigerator.
- Preheat the oven to 250ºC. To protect the ends of the bones, wrap them in aluminum foil to prevent burning.
- Place the rack in the hot oven wrapped in aluminum foil. After 10 minutes, remove the foil from the pan and leave it in the oven for another 10 minutes.
