- In a hot cast iron skillet, place the steaks that have been seasoned with Salt Grass salt and black pepper.
- Sear both sides and the fat cap for approximately 5 minutes.
- Lower the heat and add the butter, garlic, and rosemary. Using a spoon, tilt the skillet slightly and baste the meat with the butter from the bottom of the skillet.
- Repeat this process for 5 minutes on each side to achieve medium doneness.
