Angus Chorizo with Butter, Garlic, and Rosemary

Ingredients

  • 2 VPJ Angus Beef Chorizo steaks (150g each)
  • 2 cloves of garlic, peeled
  • 100 g butter
  • 50 g VPJ Salt Grass salt with black pepper

directions

  1. In a hot cast iron skillet, place the steaks that have been seasoned with Salt Grass salt and black pepper.
  2. Sear both sides and the fat cap for approximately 5 minutes.
  3. Lower the heat and add the butter, garlic, and rosemary. Using a spoon, tilt the skillet slightly and baste the meat with the butter from the bottom of the skillet.
  4. Repeat this process for 5 minutes on each side to achieve medium doneness.
