Ingredients

  • Duroc pork ribs – 1 unit
  • Tahiti lime – 1 unit
  • Chopped garlic – 2 cloves
  • Salt and pepper to taste
  • Olive oil – 2 tablespoons
  • Aluminum foil

BARBECUE SAUCE

  • Water – 360ml
  • Ketchup – 180ml
  • Apple cider vinegar – 120ml
  • Worcestershire sauce – 60ml
  • Sweet paprika – 1 tablespoon
  • Mustard – 1 tablespoon
  • Crushed red pepper – 1/2 teaspoon
  • Black pepper – 1/2 teaspoon
  • Brown sugar – 1/2 teaspoon
  • Liquid smoke – 1/4 teaspoon

  1. Season the Duroc ribs with chopped garlic, lime juice, salt, black pepper, and olive oil.
  2. Preheat the oven to 180ºC.
  3. Wrap the ribs in aluminum foil and bake at 180ºC for two and a half hours.
  4. Remove from the oven, open the wrapping, and brush with barbecue sauce.
  5. Optional: Return to a very hot oven and bake until the meat caramelizes.

BARBECUE SAUCE

Combine all the ingredients in a pot and cook over low heat for 30-40 minutes, stirring constantly to prevent sticking to the bottom of the pot. Remove from heat and serve with sauce on the side. Accompany with fries or stuffed potatoes.
